Hot Cocoa Brownies

The only thing better than a warm mug of hot cocoa topped with marshmallows is a fudgy hot cocoa BROWNIE topped with marshmallows. These homemade brownies taste exactly like a mug of hot cocoa thanks to hot cocoa mix in place of cocoa powder in our  favorite brownie recipe. Top those bad boys off with a dreamy chocolate buttercream and mini marshmallows for the ultimate treat!

Tips for making the best hot cocoa brownies

  • Use high quality chocolate: This recipe is relatively simple, so the quality of your cocoa mix and chocolate can really make or break your homemade brownies! We love Cocoa Classics Choclate Supreme Cocoa Powder in these decadent brownies.
  • Don’t forget vanilla: I know in chocolate recipes, the main focus is the chocolate ingredients like the hot cocoa mix, cocoa powder, or chocolate chips, but a good vanilla extract is absolutely essential to deepening the flavor of these homemade hot cocoa brownies.
  • Don’t over bake the brownies: Chocolate desserts are tricky to bake perfectly because you can’t go by sight. When you’re making a chocolate chip cookie or a vanilla cupcake, you can see the baked goods turning a golden brown, but with brownies there’s a fine line between baked and burnt. Take out the hot cocoa brownies when a knife inserted near the edge comes out clean, but a knife inserted into the middle comes out a little gooey. The brownies will continue to cook as they cool and you’ll be left with that perfect gooey center and a crisp, crunchy edge.

How to store hot cocoa brownies

These brownies never last very long in our house (obviously!), but if you have leftovers don’t worry–they stay soft, and fudgy for up to 7 days! We recommend storing them in a sealed container in the fridge for best results!

Can you freeze hot cocoa brownies?

Yes…and no. You can absolutely freeze the unfrosted brownies, but we don’t recommend freezing the buttercream and the marshmallows. If you’d like to freeze these indulgent brownies we recommend cooking the brownies as directed, letting them cool completely and placing inside an airtight plastic bag or wrapping tightly in plastic wrap. When ready to eat, defrost the brownies on the counter for 2 hours (or until room temperature) and frost as directed! Enjoy!

Happy baking!

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup all purpose flour
  • 2 packets Cocoa Classics Chocolate Supreme Hot Cocoa Mix
  • 4 oz bittersweet chocolate, finely chopped
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the frosting

  • 1/2 cup unsalted butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3 Tablespoons milk
  • Mini marshmallows

Instructions

  1. Preheat oven to 350°F. In a microwave-safe bowl, melt the butter. Remove from microwave, stir in sugar, and melt both for 30 seconds. Stir again and melt for 60 seconds more. You want the sugar and butter to bubble up slightly, but not burn. This amount of time should do the trick.
  2. Remove mixture from microwave and stir in bittersweet chocolate. This should melt the chocolate completely. If it doesn’t, put it in the microwave for another 15 seconds. Whisk in the eggs, one at time. Whisk until glossy and bubbles form on top.
  3. Add the rest of the ingredients and mix until just combined.
  4. Pour batter into a parchment lined 8″x8″ pan.
  5. Bake for 30 minutes, or until a knife inserted in the center of the brownies comes out clean. Allow to cool completely before frosting.
  6. While the brownies cool, make  the frosting. Beat all ingredients in a stand mixer fit with the paddle attachment on low speed, gradually increasing to high. Beat for 1 minute or until light and fluffy.
  7. Frosted the cooled brownies and sprinkle with mini marshmallows. Use a large knife to cut into 9 big brownies! Enjoy!

  1. I want to make these, but all I have is a can of Starbucks Hot Cocao. How many teaspoons or tablespoons of this would I use?
