Buttery Berry Cobbler

I like a berry crisp. I like a berry pie. I even like a berry muffin. But I *love* a berry cobbler. Like…I would marry this old fashioned berry cobbler if it were legal. This easy berry cobbler is made with a moist and buttery biscuit topping that perfectly complements a thick layer of lightly sweetened fresh berries bursting with flavor. I mean, who wouldn’t fall head over heels for this scrumptious berry cobbler? Especially when it’s topped off with a scoop of vanilla ice cream. We’re only human!

What is berry cobbler and why is it the best?

I feel like cobbler is the type of timeless dessert that my great great great grandma whipped up as a treat on a long summer day. This is based on zero fact, but cobbler probably dates back thousands of years. The food of the gods. Why? Because it’s a low tech (no kitchen tools required), natural dessert made with simple ingredients. Which is exactly why this berry cobbler will quickly become a staple recipe you’ll pass down for years and years and years.

But I’m getting ahead of myself. If you’re not familiar with cobbler allow me to introduce you. Hi! Meet cobbler. Cobbler is a scrumptious fruit dessert similar to a crisp or a crumble, except instead of being topped with a buttery crumble or crisp oat topping, it’s layer up with thick dollops of tender biscuit dough. It is DIVINE and you’re going to love it.

  • Super easy to make: This cobbler requires 10 minutes of prep work to come together into a classic homestyle dessert as opposed to other fancy fruit desserts like a pie or a tart. It’s a no-fuss dessert that’s equally delicious.

Ingredients for the best berry cobbler

One of the best thing about fruity desserts is that nature does a lot of the work. You’re starting off with a naturally sweet and delicious berry base–the buttery biscuit topping is just the cherry on top. You’ll need just 7 super simple ingredients to whip up this delicious berry cobbler. Here’s what you’ll need:

  • Berries: Well, duh! You can use fresh or frozen berries of whatever for this berry cobbler! When the berries are in season I love to load up at the farmers market or Trader Joe’s and use a mixture of raspberries, blueberries, strawberries and blackberries. But feel free to use a mix of whatever is your favorite. Frozen berries are also equally delicious and make this berry cobbler super affordable to make.
  • Flour: You’ll need all purpose flour to thicken up the berries and also to bind together your biscuit topping.
  • Sugar: You’ll need sugar for both the berry filling and the topping to give this berry cobbler a hint of sweetness. If your berries are super sweet or if you prefer a slightly tarter cobbler, feel free to go down on the sugar to taste.
  • Lemons: A little bit of lemon zest and juice will brighten up your berry cobbler and give it a little extra oompf.
  • Butter: You’ll need butter to grease your pan and for the buttery biscuit topping. If you are vegan I have had success swapping out the butter with a planted based alternative.
  • Buttermilk: Buttermilk will help to give your biscuit topping that distinct buttermilk biscuit tang. If you don’t have any on hand you can make your own with milk and lemon juice. Just follow this recipe!
  • Baking Powder: Baking powder is key to the high rise on your biscuit topping.

How to make mixed berry cobbler

I seriously don’t know why I don’t make cobbler more because it is SO darn easy. I’m talking 1 bowl, minimal ingredients and about 10 minutes of hands on time. I’d take that over spending hours making a pie any day! Basically this berry cobbler is the perfect dessert. Look how easy it is to make:

  1. Make the berry layer. Place all the ingredients for the berry layer into a buttered pan and mix to coat
  2. Make the biscuit topping. Cut the butter into the dry ingredients for the biscuit topping, add the wet ingredients and stir together until a soft dough forms. Don’t overmix!
  3. Drop the topping over the berries. Use a large spoon or a cookie scoop to drop the dough over the berries.
  4. Top with sugar and bake. This is a nonnegotiable. A spoonful of sugar sprinkled over the biscuit topping will create a lovely sweet golden crust on the biscuit topping.
  5. Devour!

It’s that simple!

Tips for making a berry cobbler that will knock everyone’s socks off

  • Use good fruit: The fruit makes up about half of your cobbler, so it’s important to use ripe, sweet berries. Berries can be pricey, so try using a mix of fresh berries and frozen berries so you can splurge on the organic raspberries without breaking the bank.
  • Don’t over mix the biscuit topping: The key to a tender, moist topping is a lightly mixed dough. The more you mix the dough the more gluten will build which can lead to tough, dry biscuits. Ew. Only mix the batter until it’s just combined.
  • Top with sugar: You must do this. It is truly the cherry on top for a show stopping mixed berry cobbler.

Ingredients

for the berries

  • 2.5 pounds mixed berries (about 10 cups)
  • 1 teaspoon lemon zest (about 1/2 lemon)
  • 1 Tablespoon lemon juice
  • 1/4 cup flour
  • 1/4 cup granulated sugar

for the topping

  • 1 1/3 cups all purpose flour
  • 1/3 cup granulated sugar
  • 1 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 7 Tablespoons butter, cold and cut into pieces
  • 2/3 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

    1. Preheat the oven to 375°F and use 1 Tablespoon of the butter (you’ll need the other 7 Tablespoons for the topping!) to butter a 9 x 13 in pan. You can use any medium/large size dish to make this cobbler, so feel free to use. whatever you have on hand.
    2. Add all the ingredients for the berry filling to your dish and use your hands or two wooden spoons to mix everything together. Once the berries are evenly coated, set aside.
    3. In a large mixing bowl combine the flour, sugar, baking powder and salt. Use a pastry cutter to cut the butter into the dry ingredients until the mixture starts to clump up. It’s okay to still have big chunks of butter throuhout.
    4. Make a well in the center of the dry ingredients and add the buttermilk and vanilla extract. Stir everything together until it forms a wet biscuit dough. It will be sticky at first, but it will thicken as it sits.
    5. Use two large spoons to drop the biscuit dough into big clumps over the berry filling. Sprinkle sugar over the topping. This will give your topping a golden crunchy finish.
    6. Place in the oven to bake for 1 hour or until the berry filling is bubbling and the topping is golden brown and relatively firm to the touch.
    7. Allow to cool for 10 minutes before serving hot with vanilla ice cream or whipped cream.

  2. This recipe is absolutely incredible but the only thing I would like more of is the top cobbler part there isn’t very much but otherwise it is amazing. I used fresh berries (blueberries, strawberries, raspberries, and blackberries) and it turned out perfectly this is one of the best recipes I have found online! I definitely recommend it to anyone who wants a tasty fruity dessert.

  5. I’m surprised Broma does not have more cobbler recipes. Cobblers are so easy to make and delicious! I like that this recipe is adaptable. I just bought a ton of fresh organic blueberries. I will use this recipe to make blueberry cobbler!
