HELLO PARTY PEOPLE! WHY ARE WE YELLING? Because these loaded funfetti cookies call for blasting tunes, dancing around the kitchen, and throwing yourself a little sprinkle soiree. I LOVE funfetti because it’s such a simple and easy way to jazz up a vanilla recipe. Funfetti cake, funfetti rice krispie treats, funfetti cheesecake, funfetti ice cream, funfetti macarons…it’s one of the most popular flavors on the site and for a good reason. Funfetti might just be the most scrumptious, nostalgic flavor out there.

And before you get started, I *know* that funfetti is technically just vanilla with sprinkles, but I will die on this hill. Funfetti is a flavor and these funfetti cookies taste way better than any regular ol’ sugar cookie.

What makes these funfetti cookies SO good?!

If you’re a sugar cookie fan, you have come to the right place. Of course I adore a gooey brown butter chocolate chip cookie,  but sometimes a soft, melt-in-your-mouth, buttery, sugar cookie is indescribably delicious. Maybe it’s because I grew up eating so many Pillsbury sugar cookies, but I get very specific cravings for soft and chewy sugar cookies. And these funfetti sugar cookies will blow your mind. They have a perfectly crackly exterior with a super soft and chewy interior. These funfetti cookies are:

Ingredients for funfetti cookies

Now that we’re all on the same page that you absolutely need these funfetti cookies in your life, let’s get down to the details. These easy funfetti cookies are made with just nine simple ingredients that you probably already have in your pantry. Here’s your grocery list:

  • Unsalted Butter: We like using unsalted butter in baking because it allows you to control exactly how much salt ends up in the finished product. Make sure that your butter is as true room temperature to ensure it will cream up into a light and fluffy batter.
  • Granulated Sugar: Granulated sugar will give your funfetti cookies the perfect amount of sweetness. If you prefer your cookies on the cakey-er side, you can go down on the sugar by 1/2 cup.
  • Egg: You’ll only need one egg for these funfetti cookies. Make sure your egg is it at room temperature so that it does not cause the batter to split.
  • Vanilla Extract: Now in most recipes I am a big advocate fro pure vanilla extract, but this funfetti cookie recipe is equally as delicious with artificial vanilla extract because that nostalgic funfetti flavor we love is usually made with the artificial stuff. Either will work for this recipe!
  • All Purpose Flour: Regular old all purpose flour will give you a soft and chewy funfetti cookie. You can also use cake flour if you want your cookies to taste a little more like the funfetti cake mix cookies!
  • Baking Powder + Baking Soda: A combination of baking powder and baking soda will give your cookies a good rise and that classic crackly top.
  • Salt: All sweet treats need a bit of salt to offset all the sugar and depeen the flavor profile.
  • Rainbow Sprinkles: Funfetti is allllllll about the sprinkles, which is why we loaded up these bad boys with tons of sprinkles. The extra sugar will make these cookies super bright and colorful AND tasty.

Tips for the best funfetti cookies

These funfetti cookies are super easy to make, but a few tips will guarantee you perfectly soft cookies every time. Make sure you read through these and follow them closely for the best results!

  • Underbake them: I cannot stress enough how important this is. This will make or break your cookies. The key to scrumptious funfetti cookies is a chewy edge and a soft center. You’ll want the cookies to be pretty raw in the middle when you take them out of the oven. The cookies will continue to bake as they cool and stay soft for days!
  • Don’t overmix the batter: Overmixing can lead to a tough cookie and a sprinkle mess. Only mix your batter until it’s just mixed and no streaks of flour remain. Do not continue to beat the batter after you’ve added the rainbow sprinkles as this will break down the sprinkles and they will bleed into your cookies.
  • Use high quality ingredients: With simple recipes it is SO important to use high quality ingredients. Make sure you’re using a high quality butter (we love Vermont Creamery!) and good sprinkles instead of the waxy kind.

How to freeze funfetti cookies

I bet you thought that these festive cookies couldn’t get any better. Think again. These funfetti sugar cookies freeze like a dream. You can keep these bad boys in an airtight bag in the freezer for up to 3 months. Simply bake the cookies as directed and allow to cool completely before placing in a freezer safe bag or airtight container. When you’re ready to eat, simply defrost the cookies overnight on the counter and enjoy!

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 1 large egg, room temperature
  • 1 Tablespoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup rainbow sprinkles

Instructions

    1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
    2. In a stand mixer fit with the whisk attachment, beat the butter and sugar together until light and fluffy, about 3 minutes.
    3. Use a rubber spatula to scrape down the sides of the bowl, adding the egg and the vanilla extract. Beat until light and fluffy and pale in color.
    4. Add the flour, baking powder, baking soda, and salt and beat until just combined and no streaks of flour remain. Do not overmix. Add the sprinkles and turn the mixer on quickly to distribute the sprinkles. Try not to mix the dough much or this will cause the sprinkles to break.
    5. Use a 1 ounce cookie scoop to scoop the dough into 1 inch balls, dropping them onto your cookie sheet about 2 inches apart. Bake for 11 minutes or until the cookies are just set on the edges, but still very gooey in the middle. This will keep your cookies super soft. Allow the cookies to cool for 10 minutes before transferring to a cooling rack. Enjoy!

  1. These funfetti cookies can be stored in a airtight container or plastic bag for up to 3 days at room temperature, in the fridge for up to a week or in the freezer for up to 3 months.

  2. I made my first sheet 12 cookies to a sheet and they melted together in to a uni-cookie so for the next two batches I did 6 cookies per sheet for more space. baked at 350 for 20 minutes.
