I don’t know if you know this, but Easter is merely days away!? I know. It really snuck up on me this year too. Every year my family goes all out for Easter with a massive brunch spread that leaves everyone in a sugar and carb induced coma (in the best way possible). I always find it so hard to decide what to make for Easter though! Donuts? Coffee Cake? Quiche! It’s overwhelming. And then I remember…oh, yeah, I do this as like…my job. And there are SO MANY goodies on the blog to impress everyone with this Easter. So, we’ve rounded up our favorite Easter brunch recipes so you don’t have to do all that searching for the best brunch recipes out there.

How to put together the perfect Easter brunch spread

  • Make a combination of savory and sweet treats: I lean heavily to the sweet side of things because they’re simply more fun, but it’s always good to have a nice balance of sweet and savory food. I like to focus my energy on a special sweets like pancakes, waffles, or a cake, but balance it out nicely with a big salad, roasted potatoes and eggs!
  • When in doubt, make more. I hate food waste, but I would so much rather have leftovers than hungry guests! If you think you might need more food, I recommend erring on the side of too much. You can always freeze leftovers and send guests home with leftover goodies!
  • Make a variety of different flavors. It’s my opinion that brunch doesn’t need to be a perfectly cohesive spread. Don’t worry about all the flavors going together and instead just make a variety of different dishes, so everyone can put together a smorgasbord plate!

Breakfast Easter Brunch Recipes

I think it’s always a good idea to have a few different very breakfast-y leaning treats at brunch! Since I’m usually cooking for a crowd for Easter I prefer to make larger format treats that can serve a crowd as opposed to pancakes, but if you have the time to prep things ahead and just keep them warm they make for a fun breakfast!

  • Orange Marmalade French Toast Bake: If you’re looking for a quick, easy, and show stopping dish, this Orange Marmalade French Toast Bake is it. You can prep everything the night before so there’s no rush come Easter Morning and better yet, it serves a crowd. Simply take it out of the fridge, pop it in the oven and voila!
  • Apricot Almond Pop Tarts: Growing up, PopTarts (like the ones in the silver foil) were one of my favorite breakfast treats. Level up with these scrumptious homemade Apricot Almond Pop Tarts. Both kids and the grown ups will be going back for seconds.
  • Green Shakshuka: Shakshuka is one of my favorite savory dishes to make for brunch. It’s super flavorful, easy to make and easy to serve!
  • Strawberry Crepes: I love make crepes for brunch because everyone can pick and choose their own fillings! Not only does this ensure everyone gets what they want, it also takes some of the work off your hands and turns it into a fun DIY that everyone can get involved in!
  • Almond Croissant French Toast Bake: A french toast bake made with almond croissants…like, need I say more?
  • Belgian Waffles: If there is any time to break out the waffle iron, it’s Easter brunch. These Belgian waffle are truly SO tasty and perfect for serving up to a crowd.
  • Blueberry Sweet Rolls: I LOVE making cinnamon rolls for special occasions. And these blueberry sweet rolls are perfect for ALL your spring occasions!
  • Spring Fingerling Potatoes: It’s easy to get overloaded on the sweets at brunch, so try mixing in a savory side dish! These Garlic Roasted Fingerling Potatoes tossed with dill, goat cheese, and fresh spring peas are the perfect crunchy complement to all those cakes and sweets.
  • Blueberry Coffee Cake: I love a coffee cake for brunch! It’s easy to make and serves a crowd! This blueberry crumb cake is tender and moist with a thick layer of blueberry jam and a buttery crumb topping that’s sure to knock everyone’s socks off.

Carrot cake is the unofficial mascot of Easter in my opinion. Like….it’s not Easter if there’s not carrot cake. And luckily for your we have tons of different carrot cake recipes to choose from for Easter brunch!   • Classic Carrot Cake: You simply cannot go wrong with a classic carrot cake for Easter brunch! This two layer carrot cake is my absolute favorite of all time!
  • Carrot Cake Banana Bread: Carrot Cake is obviously an Easter Staple, but you know what else is a staple for all occasions? Banana bread. And why choose between banana bread and carrot cake when you can have both? You KNOW I love a good quick bread (like hello) and this Carrot Cake Banana Bread is perfect for Easter.
  • Carrot Cake Sheet Cake: This one-bowl carrot sheet cake is without a doubt the best carrot cake I’ve ever had! It’s supremely soft, super moist, loaded with carrots, and topped with a dreamy cream cheese frosting. Basically, it’s the best thing you’ll ever eat.
  • Carrot Cake Muffins: If you’re looking for something a little easier to throw together than a frosted cake, but want that carrot cake flavor, I highly recommend these carrot cake muffins! They come together in one bowl and are perfect for Easter!
  • Robin’s Egg Carrot Cake Donuts: If there is a time for donuts, it’s certainly brunch. And while we love a good carrot cake for brunch, eating it in donut form makes it a little more fun, doesn’t it? Plus they’re baked, so to me…that’s a health food?

Spring Desserts for Easter Brunch

The best part about brunch is that you can acceptably eat dessert for breakfast. So why not lean into that and just go alllllll out on your dessert spread. I love to make something smaller (like a cookie or a bar) and then something show stopping like a layer cake!

  • Strawberry Rhubarb Bakewell Tart: While there are a few steps to this beautiful spring tart, it’s totally worth it. It looks AND tastes amazing, and is the perfect special something for Easter Brunch.
  • Caramelized Banana Upside Down Cake: I love upside down cakes. They’re like the inverse of a normal cake–you do all the work at the beginning and then after it’s done baking instead of having to assemble or carefully frost anything, you flip it over and all the magic happens. This Banana Upside Down Cake is perfect for brunch in all it’s sticky, sweet, caramel goodness. YUM.
  • Sugar Cookies: I know, I know, cookies aren’t exactly a brunch food but we’re all for eating cake for breakfast here. So cookies at brunch? Sounds good to me. Cut out easter eggs, bunnies, or flowers and sprinkle with some fun pastel sugar. Or make it an activity for the kids (or adults!) to decorate!
  • Lemon Blueberry Cake: I love brunch because it’s perfectly acceptable to eat cake at breakfast. And this lemon blueberry cake is super moist and bursting with blueberries so you get a little fruit in there too 🙂
